In a large stock pot, heat 2 tablespoons of oil.

Toast the pasta, stirring constantly. About 2-3 minutes.

Remove the pasta from the pot. Set aside until ready to use.

Heat 1 tablespoon oil to the same stock pot.

Add the ground beef, salt, and pepper.

Add the potato, onion, garlic, jalapeno (if using)
