Add the tomatoes, garlic, onion, salt, and 1 cup water in a blender.
Blend until smooth.
Set aside until ready to use.
Heat olive oil in a large stock pot.
Add the elbow macaroni.
Do not stop stirring.
Toast until golden brown.
Add the carrot.
Cook for 1 minute.
Add the broth.
Bring to a boil.
Simmer for 10 minutes.
Add the calabacita.
Cook for an additional 5 minutes.
Add 1 cup of water.
Stir and serve immediately.
