Preheat the oven to 375F.
Line large tray with baking paper.
Cut the puff pastry into 6 equal parts.
Place each on a tray lined with baking paper.
Beat the yolk and coat each piece well.
Sprinkle the edges with the slivered almonds and a little sugar.
Prick each tart several times with a fork.
Bake for 15 - 20 minutes or until golden brown.
Note: The tart will rise and puff.
Meanwhile in a medium size bowl combine strawberries, granulated sugar, and vanilla extract.
Carefully mix so as not to break the strawberry slices.
In another bowl combine cream cheese (softened), heavy cream, powdered sugar, and lemon juice. Mix well until the ingredients are combine. Place in the refrigerator while we bake the dough.
Remove the baked dough from the oven and let it rest for 5 - 6 minutes.
Then, using a spoon, press the dough in the middle to form a small hole.
Into this hole add the cream cheese mixture about 2 Tbsp.
Then add strawberries and sprinkle with powdered sugar.
