This easy Baked Salmon with Roasted Vegetables is a tasty main course meal that comes together in less than 30 minutes.

Preheat the oven to 400 degrees F and grease two large baking pans. Arrange salmon filets on the baking sheets.
Season with salt and pepper.
In a small bowl, stir together the oil, salt, pepper, garlic powder, chili powder, cumin and lime juice.
In a large bowl, add all the veggies and the oil mixture.
Mix to combine.
Arrange the veggies around the salmon filets on the baking sheet.
Bake for 12-15 minutes until the salmon is opaque and flaky when pulled apart with a fork.
Take the baking sheets out of the oven and remove the salmon. Tent with foil paper.
Return the veggies to the oven. Broil for 2 minutes.
Remove from the oven.
Serve and top with chopped cilantro and drizzle with more lime.
