1 Set aside 1/4 cup of the pineapple. We'll need it when we serve. 2 In a blender combine pineapple and ice. Blend until smooth. 3 In a bowl combine coconut milk and sugar. Pour into the pineapple smoothie and blend for 1– 2 minutes. 4 Serve in glasses. 5 Fill 1/2 of the glass with the pineapple Pina colada. 6 Top with pieces of fresh pineapple and a stick of fresh mint.View original recipe
