What you need

cup white rice

carrot

onion

garlic

ground cumin

tsp salt

oz tomato sauce

cup chicken broth

jalapeno

lb rock shrimp

cup water
Instructions
0 Heat the oil in a stock pot. 1 Add the rice. 2 Stir constantly for 3 minutes. 3 Add the carrot and onion. 4 Cook for 2 minutes. 5 Add the garlic, cumin, salt, tomato sauce, and chicken broth. 6 Stir to combine. 8 Slice through a jalapeno and add to the pot. (Optional) 9 Cover and cook on medium-low heat for 10 minutes 7 Don't stir the rice. 10 Add the shrimp and 1/4 cup water. 11 Cover and cook for 2 minutes. 12 Leave the lid on and turn heat off. 13 After 5 minutes, uncover and test the rice. 14 It should be fluffy. 15 If not, add a splash of water and cover again for 5 more minutes with the heat off. 16 Once the rice is ready, mix to combine. 17 Serve and enjoy.View original recipe
