What you need

red onion

salmon

carrot

cup cauliflower florets

ground black pepper

tsp ground cumin

cup broccoli florets

salt

tsp chili powder

tbsp cilantro

yellow squash

cup corn oil

tbsp garlic powder

lime juice
Instructions
Preheat the oven to 400 degrees F and grease two large baking pans. Arrange salmon filets on the baking sheets. Season with salt and pepper. In a small bowl, stir together the oil, salt, pepper, garlic powder, chili powder, cumin and lime juice. In a large bowl, add all the veggies and the oil mixture. Mix to combine. Arrange the veggies around the salmon filets on the baking sheet. Bake for 12-15 minutes until the salmon is opaque and flaky when pulled apart with a fork. Take the baking sheets out of the oven and remove the salmon. Tent with foil paper. Return the veggies to the oven. Broil for 2 minutes. Remove from the oven. Serve and top with chopped cilantro and drizzle with more lime. Notes To reduce the heat, omit the chili powder. The veggies will still have plenty of flavor. To up the heat, swap out the chili powder with ground chili de arbol. Instead of lime juice, you can also use white distilled vinegar.View original recipe
