This California Omelette is a great way to enjoy a tasty breakfast. Packed with fresh spinach and topped with avocado. It's irresistibly good.

What you need

onion

jalapeno

tomato

frozen spinach

tbsp butter
egg

cup monterey jack

salt & pepper

cilantro

avocado
Instructions
1 Heat up the oil in a large skillet. 2 Add the onion, jalapeno, tomato, and spinach 3 Cook for 3-4 minutes, or until the spinach is soft. 4 Remove from the skillet. 5 Melt butter in the same skillet. 6 Whisk the eggs and add to the skillet. 7 Cook for 30 seconds. 8 Lift the sides so the uncooked egg cooks. 9 Then add the cooked spinach mixture to one half of the egg. 10 Add the cheese. 11 Fold the other half over the filling. 12 Cook for another 2 minutes, or until the egg is fully cooked. 13 Top with chopped cilantro and sliced avocado. 14 Serve with toast or crispy potatoes.View original recipe
