Instructions
0 Add chicken to a large stock pot. 1 Add enough water to cover (about 4 cups), ½ onion, 1 garlic clove, 1 tablespoon salt. 2 Cover and cook for 15 minutes. 3 Remove the chicken from the pot and let cool. 4 Discard the onion and the garlic. 5 Store the chicken broth in a separate container for later use. 6 Once the chicken is cool enough to handle, remove the skin. 7 Shred the chicken with two forks. 8 To prepare the tostada, add about 2 tablespoons of the shredded chicken. 9 Add the toppings - lettuce, tomatoes, avocado, crema mexicana, etc. 10 Be sure not to load the tostada too much, or it will be difficult to eat. 11 Eat by carefully picking up the tostada with both hands, just like a pizza. 12 Serve with a fork.
