Instructions
To Make the Cookies: 1 In a large bowl, cream the softened butter with the sugar. 2 Add the honey, lemon and orange zest, egg, and vanilla. Mix until well combined. 3 In another large bowl, mix the dry ingredients. 4 Combine the flour mixture with the butter mixture until a dough forms. 5 Using a spatula, scrape down the sides of the bowl. 6 If doing this in a kitchen mixer, use medium speed and the paddle attachment. 7 Wrap the chocolate cookie dough in plastic wrap. 8 Place in the refrigerator for 30 minutes, up to 1 day. 9 Take out the dough from the fridge, and using a rolling pin, roll it out. 10 Cut out cookies, using a circular 3-inches cookie cutter. 11 Place them on a greased baking sheet, or line with wax paper. 12 Bake cookies in a 350 degrees F oven for 10 minutes. 13 Let cool slightly. To Assemble: 15 Add dulce de leche to a pastry piping bag. 16 Then, pipe a thick layer of the dulce de leche onto the cookie. 17 Place the top cookie and press down slightly. 18 With a knife, smooth out the sides where the dulce de leche has come out. 24 Repeat until there are no more cookies. 19 Once you are done, place them in the fridge for 10 minutes. 20 Melt the chocolate in 10 second intervals in the microwave. 25 Stir after every 10 seconds so it won't burn. 21 Dip the cookies in the chocolate and place on wax paper. 22 Repeat until done. 23 Place them in the fridge to harden for 10 minutes. 26 Enjoy!View original recipe
