What you need

cup lard

cup no-calorie sweetener

tsp stevia
egg

tsp vanilla extract

tsp baking soda

tsp salt

tsp ground cinnamon

cup almond flour

cup coconut flour

sugar cookie

tbsp no-calorie sweetener
Instructions
0 In a large bowl, beat together butter, lard, sweetener, and stevia. 1 (I used my KitchenAid, but you can use an electric mixer too). 2 Add in eggs and vanilla. 3 Blend well. 4 Add in baking soda, salt, and cinnamon. 5 Slowly add in almond and coconut flours. 6 Mix on low until well combined. 7 Take a small amount of the dough, and form balls. 8 They should all be the same size in order to bake evenly. 9 (I got about 4 dozen cookies). 10 In a separate, smaller bowl, combine sweetener and cinnamon for coating. 11 Roll each ball in the cinnamon "sugar" mixture. 12 Line a baking sheet with parchment paper. 13 Place the cookie dough ball on the baking sheet and smash it down with the back of your hand. 14 Bake at 350°F for about 11 minutes. 15 The edges around the cookie will begin to brown. 16 Let cool on a cooling rack. 17 Enjoy!View original recipe
