0 In a deep skillet, heat the olive oil. 1 Add the calabacitas and salt. 2 Cook for 3 minutes, stirring frequently. 3 Add the cream cheese. 4 With your spatula, break up the cream cheese. 5 Stir for 2 minutes, or until the cream cheese “melts” slightly. 6 Add the Monterey Jack and roasted poblano chile. 7 Cook for 2 minutes. 8 Add the corn. 9 Cook for an additional 2 minutes. 10 Taste for salt. 11 Serve with flour tortillas. 12 Enjoy!View original recipe
