What you need
chipotle pepper

salt

tbsp lard

oz chorizo sausage

onion

cup monterey jack

cup chicken broth
Instructions
0 To a blender, add the pinto beans, chipotle, and salt. 1 Blend until smooth. 2 Note: Depending on your blender, you might need to add some of the bean broth to blend the beans. Add as needed. 3 Set aside. 4 In a large skillet, melt the lard. 5 Cook the chorizo. About 5 minutes. 6 Drain the excess fat. 7 Return chorizo to the skillet. 8 Add the onion. 9 Cook for 1 minute, or until the onion is translucent. 10 Add the bean mixture to the skillet. 11 Add the cheese. 12 Stir to combine. 13 Cook until cheese has fully melted. 14 About 2 minutes. 15 Serve warm.View original recipe
