Instructions
1 In a large skillet, heat the oil. 2 Add the jalapeno, tomato, onion, salt and pepper. 3 Cook for 3-4 minutes. 4 Stir frequently. 5 In a separate bowl, whisk the eggs with salt, pepper, and pinch of ground cumin. 6 Lower the heat, and add the eggs to the pan. 7 Stir frequently and gently until the eggs are cooked. 8 About 3-4 minutes. 9 Meanwhile, toast the bread. 10 Smash the avocado and smear on one side of the bread. 11 Add some of the egg mixture, a few jalapeno slices, and a couple of slices of bacon. 15 Top with the other half. 14 Repeat until the rest of the bread. 12 Serve with salsa or as is and enjoy.View original recipe
