What you need

onion

jalapeno

tomato

salt & pepper

tsp ground cumin

tbsp butter
egg

cup shredded cheddar

cilantro

avocado
Instructions
1 Heat up the oil in a large skillet. 2 Add the onion, jalapeno, and tomato. 15 Season with salt, pepper, and cumin. 3 Cook for 3-4 minutes, or until the tomato is soft. 4 Remove from skillet. 5 Melt butter in the skillet over medium heat. 6 Whisk the eggs and add to the skillet. 7 Cook for 30 seconds. 8 Lift the sides so the uncooked egg cooks. 9 Then add the cooked tomato mixture to one half of the egg. 10 Add the shredded cheese. 11 Fold the other half over the filling. 12 Cook for another 2 minutes, or until the egg is fully cooked. 13 Top with chopped cilantro and sliced avocado. 14 Serve any remaining filling on top of the omelette and with salsa.View original recipe
