Instructions
0 In a large skillet, heat ¼ cup olive oil. 1 Add corn tortillas and fry until golden. 4 minutes. 2 Remove from pan and place on a paper towel to drain. 3 Salt the tortillas. 4 Add remaining 2 tablespoons of oil to the pan. 5 Add onion and garlic. 6 Cook for 1 minute. 7 In a large bowl, whisk the eggs. 9 Add eggs to the pan. 8 Season with cumin, oregano, salt and pepper. 10 Immediately add fried tortillas. 11 Gently fold the tortillas with the eggs. 12 Cook for 3-4 minutes or until eggs are completely cooked. 13 Top with cilantro and green onions. 14 Enjoy!View original recipe
