0 Peel the potatoes and dice into small cubes. 1 Dice the jalapeno, onion, and tomatoes. 2 Heat the olive oil in a large skillet. 3 Add the potatoes and cook for 7 minutes, or until golden brown. 4 Stir occasionally. 5 Add the onion and jalapeno. 6 Stir to combine and cook for 1 minute. 7 Add the tomatoes and salt. 10 Mix everything together. 8 Cover and cook for 5 minutes. 9 Test the potatoes to see if they are done. 11 If they are not ready, add the water. 12 Stir and cook for an additional 5 minutes. 13 Serve as with tortillas as tacos or as a side dish. 14 Enjoy!View original recipe
