Potato Tacos Dorados

What you need

cup water

salt

corn tortilla
cup oil
Instructions
0 Peel and dice the potatoes. 2 Place in a stockpot along with the water. 4 Boil until tender. 6 Drain the water. 8 Using a potato masher, mash the cooked potato until smooth. 10 If necessary, add a splash of water. 12 Set aside until ready to use. 14 Heat the tortillas in the microwave for 30 seconds. 16 Turn and heat for another 30 seconds. 18 Place a tortilla flat on the counter. 20 Add 1 tablespoon of the mashed potatoes to one half of the tortilla. 22 Fold over the other half, creating a taco. 24 Insert a toothpick to the top of the center of the tortillas, sealing the taco. 26 Set aside and repeat until done with all the tortillas. 28 Heat oil in a large skillet. 30 Fry the taco in the oil for 2 minutes. 32 Carefully turn the taco and fry on the other side for 2 more minutes. 34 Fry two tacos at a time. Do not crowd the pan. 36 Place fried taco on a paper towel to drain any excess oil. 38 Cover with aluminum foil to keep warm. 40 Repeat until done frying all the tacos.View original recipe
