Potato Taquitos

These Potato Taquitos are perfect for game day. A crispy and yummy appetizer topped with shredded cabbage, lime, and Mexican salsa. They are hard to resist!

What you need
cup potato

cup monterey jack
cup oil

shells
red cabbage
lime

salt

diced tomatoes with green chilies

cilantro
Instructions
0 Warm up the corn tortillas in the microwave for 1 minute. 1 Make sure they are pliable and not stiff. 2 Add 2 tablespoons of potatoes to end of the tortilla and top with 1 tablespoon cheese. 3 Roll up the tortilla. 4 Insert a toothpick to the center of the taquito. Set aside. 5 Repeat until there are no more tortillas. 6 Heat oil in a large skillet. 7 Add 1-2 taquitos to the oil. 8 Do not overcrowd the pan or they will not brown properly. 9 Brown on all sides. About 2-3 minutes on each side. 10 Then lay on a paper towel to drain any excess oil. 11 Repeat until all are cooked. 12 Add desired toppings. 13 Enjoy!View original recipe
