What you need

cup water

tbsp salt

tbsp pepper

onion

garlic

bay leaves

ancho chili powder

ancho chile

cup water

tbsp corn oil

oz hominy

tsp oregano
Instructions
For the Beef: 1 Add all the ingredients to cook the beef in a large stock pot. 2 Cook for 45 minutes. 3 Discard the onion and bay leaves. 4 Using a spoon remove any debris from the cooking. 5 Set the beef and broth aside until ready to use. For the Sauce: 7 Remove the stems and cut the chiles in half. 8 Remove the seeds and veins from inside the chiles. 9 Place in a stock pot and cover with 3 cups of water. 10 Cover and bring to a boil. 11 Once boiling, turn heat off and let sit for 5 minutes. 12 Discard the water and place rehydrated chiles in a blender. 13 Add the onion, garlic, 1 cup water, and salt to the blender. 14 Blend until smooth. 15 Set aside until ready to use. To Assemble Pozole: 17 Heat the oil. 18 Carefully strain the sauce into the pot. 19 Cook for 5 minutes. 20 Add the beef, broth, and oregano. 21 Cook for 20 minutes. 22 To the pot, add the rinsed hominy. 23 Cook for 10 minutes. 24 Serve and enjoy.View original recipe
