What you need

cup flat-leaf parsley

cup fresh cilantro

garlic
tsp dried oregano

lemon juice

pinch cayenne

tsp salt

ground black pepper

cup extra-virgin olive oil

tbsp olive oil

cup leftover turkey

onion

flour tortilla

cup shredded cheddar
Instructions
1 Mix all the ingredients for the chimichurri sauce and set aside. Adjust the amount of garlic to your taste. 2 In a medium-sized pan, heat the olive oil. 3 Add the meat and onion. 4 Cook until meat is cooked through, and the onion is translucent. 5 Turn off the heat, and mix the meat with the chimichurri sauce. 6 Place a flour tortilla on a skillet. 7 Add cheese, meat mixture, and top with another tortilla. 8 Reduce flame to low. 9 Cook for 2 minutes on each side. 10 Serve with remaining chimichurri sauce. 11 iBuen Provecho!View original recipe
