What you need

ancho chili powder

tsp oregano

tsp ground cinnamon

tsp black peppercorn

tsp salt

cup pineapple

cup apple cider vinegar

achiote

lb pork chop

crushed pineapple

bamboo shoots

Instructions
For the Marinade: 2 Heat the oil in a large skillet. 3 Add the guajillo chile and cook for 2 minute. 4 Stir constantly. 5 Add the onion and garlic. 6 Cook for 2 minutes, stirring constantly. 7 Add the water. 8 Cover and take off heat. 9 Let it cool slightly. About 5 minutes. 10 Then add to a blender along with the remaining marinade ingredients. 11 Blend until smooth. 12 Set aside until ready to use. For the Pork: 14 Rinse and pat dry the pork. 15 Cut into thin slices. 16 Coat each slice in the marinade. 17 Cover with plastic wrap and marinate for 4 hours in the fridge. 18 Overnight is best. To Assemble the Trompo: 19 Take a pineapple slice and pierce through the skewer to form the base. 21 Add layers upon layers of the sliced marinaded pork. 22 At the very top, add another pineapple slice. 23 Heat oven to 400 degrees F. 24 Cook for 1 1/2 hours. 25 Reduce heat to 350 degrees F. 26 Cook for another 30 minutes, or until pork reaches an internal temperature of 145 degrees F. 27 Remove from the oven. 28 Let sit for 10 minutes. For the Tacos: 29 Chop pork into tiny pieces. 31 Warm up tortillas. 32 Add pork to tortillas. 33 Top with cilantro, onion, pineapple (either fresh or from the trompo) and salsa. 34 iBueno provecho!View original recipe
