Torrejas (Mexican French Toast)

Torrejas (or Mexican French toast) are a sweet treat served during Lent. Made with old bread and a fluffy egg mixture, these little pieces of heaven make a filling meal.

What you need

egg
cup vegetable oil

cup agave nectar
Instructions
0 Slice the bread and set aside. 1 Separate the eggs yolks from the egg whites. 2 Whisk the egg whites until stiff peaks. 3 Mix the egg yolks in with the egg whites. 4 Gently mix. 5 Heat the oil in a large frying pan. 7 Coat each slice of bread in the egg mixture, one by one. 8 Fry in the oil for 2 minutes. 9 Turn and fry for an additional 2 minutes. 10 Be sure not to fry too many pieces in the pan or they will not fry well. 11 When done place on a paper towel to drain excess oil. 12 Then place in a shallow plate and cover with foil. 13 Repeat with the remaining bread until done. 14 Cover with desired topping and enjoy.View original recipe
