What you need

red bell pepper

zucchini

onion

cup pinto beans

chicken bouillon cube

tbsp ground cumin

oregano

salt & pepper

tortilla

yellow onion

cilantro

cheddar cheese

sour cream
Instructions
0 In a deep saucepan, heat oil. 1 Add red pepper and zucchini. Cook for 1 minute. 2 Add onion, salt and pepper. Cook for another minute. 3 Add cooked pinto beans and about ½ cup of the bean juice. 4 Add bouillon, cumin, and oregano. Let simmer for 7 minutes. Taste for salt. The liquid will have thickened. 5 Heat tortillas. Top tortillas with bean mixture and the remaining ingredients. 6 Enjoy!View original recipe
